The batter for this traditional French dessert is somewhere between that of a cake and a custard. It takes no more than 10 minutes to prepare the batter in the blender.

Ingredients
- 1 tablespoon unsalted butter
- 6 large eggs
- 1 1/4 cup half-and-half
- 1/2 cup granulated sugar
- 2 tablespoon brandy
- 1 tablespoon vanilla extract
- 1/4 teaspoon salt
- 2/3 cup all-purpose flour
- 1 (12-ounce) package frozen cherries, thawed
- confectioners' sugar, for serving
Directions
- Step 1: Pre-heat the outdoor grill.
- Step 2: Generously coat a 10-inch skillet with 1 tablespoon unsalted butter.
- Step 3: Process 6 eggs, 1 1/4 cup half-and-half, 1/2 cup sugar, 2 tablespoons brandy, 1 tablespoon vanilla extract and 1/4 teaspoon salt until well blended.
- Step 4: Add 2/3 cup flour and process until smooth and well blended.
- Step 5: Scatter 1 (12oz) bag frozen cherries in the prepared skillet and pour the batter over them.
- Step 6: Place on grill over indirect heat and "bake" until puffed and golden, about 40-45 minutes. Lightly dust with confectioners’ sugar before serving.
