This cooked salsa is perfect for any Cinco de Mayo fiesta. Looking to get a little hotter? Add two serrano peppers and two habanero peppers to make a spicy three-chili salsa.This recipe is courtesy of Burrito Beach.

Ingredients
  • 2 medium beefsteak tomatoes
  • 1/2 medium onion, yellow or white, cut into large chunks
  • 1 clove garlic, peeled
  • 1/4 cup cilantro
  • 2 large chipotle peppers canned in adobo sauce
  • 1 tablespoon lime juice
  • 1/2 teaspoon salt
Directions
  1. Turn oven on to broil.
  2. Place tomatoes, onion, and garlic onto a foil-lined sheet pan.
  3. Place sheet pan on bottom 1/3 rack of the oven and cook under broiler.
  4. Cook for about 30 minutes, turning ingredients over every 10 minutes.
  5. Tomatoes should pop out of their skin and become soft.
  6. Remove pan from oven and let cool a bit.
  7. Place cooked ingredients and cilantro, chipotle peppers, lime juice and salt into a food processor or blender and puree together.
  8. Use sauce to toss with chicken asada or to eat with chips.
