Joy Bauer's Apple Cinnamon Quinoa Parfait

Ingredients
- 3 tablespoon i can’t believe it’s not butter spread
- 4 medium apples, diced
- 2 teaspoon ground cinnamon
- 2 ½ cup non-fat vanilla greek yogurt
- 1 cup cooked quinoa
Directions
- Melt the I Can’t believe It’s Not Butter! spread in a 1 quart non-stick skillet over medium heat. Add the apples and cinnamon, stirring occasionally until apples are tender, about 5 minutes. Remove from heat and set aside.
- Evenly layer about ¼ cup yogurt in 4 parfait glasses. Top each with 2 tablespoons of quinoa, then ½ cup cooked apples. Repeat layers until the parfait glass is full.
- Serve immediately. Enjoy!
