Ingredients
  • 1 tablespoon oil for cooking
  • 1 onion, finely chopped
  • 3 garlic cloves, chopped
  • 3 cm piece of ginger, grated (about 1 inch)
  • 250 gram can of plum tomatoes (about 9 ounces)
  • 1 green chili, finely chopped
  • 1 teaspoon salt
  • 1 teaspoon fenugreek powder (methi)
  • 1 teaspoon turmeric
  • 1 teaspoon chili powder
  • 1-2 potatoes, peeled and chopped into 3cm cubes
  • 200 gram frozen peas (about 8 ounces)
  • 1 teaspoon garam masala
  • handful of fresh coriander (cilantro), chopped
Directions
  1. Heat oil and add onion, and after a few minutes stir in the garlic.
  2. Cook for about 10 minutes until the onions are soft and turning golden.
  3. When the onions are cooked, add the tomatoes, grated ginger, salt, turmeric, fenugreek and chili.
  4. Stir together and cook the sauce until the tomatoes and onion melt together, creating a thick masala paste.
  5. Once it is thick and shiny, add the potatoes.
  6. Stir to coat them in the sauce then put the lid on the pan and reduce the heat.
  7. Leave to cook for 5-10 minutes before adding the frozen peas.
  8. Leave to cook for another 10 minutes until the potatoes are soft.
  9. (Note: if your potatoes stick, just add a splash of water. Don't stir too much as you dont want the potatoes to mash).
  10. Pour in enough hot water to get the consistency you want.
  11. Sprinkle with garam masala and fresh coriander and serve with roti or rice.
