Ingredients
- 1 stick unsalted butter, room temperature
- 1 cup sugar
- 2 whole eggs
- 1 teaspoon vanilla
- 1/2 cup cocoa powder
- 2 cup superfine almond flour
- 1/4 cup coconut flour
- 1/4 teaspoon baking soda
- 1/8 teaspoon salt
- 1/4 cup powdered sugar
Directions
- Preheat the oven to 350 degrees.
- Using a stand mixer, combine the butter and sugar until well mixed.
- Add eggs, one at a time and mix well after each addition.
- Add vanilla.
- Next add in the almond flour, coconut flour, cocoa powder, baking soda and salt.
- Stir until mixed.
- Roll them into 1 inch balls and roll in powdered sugar.
- Place on a parchment-lined baking sheet.
- Use a glass with a flat bottom to gently flatten them out.
- Cook for 8-10 minutes.
- Do not overcook.
- They will continue to cook when removed from the oven.
