Quesadillas To Suit Every Taste
The humble quesadilla often gets left by the wayside, and that's a shame. When people want to whip up a quick meal, they often first think of a sandwich, a salad, an egg dish, or a pasta dish. But the quesadilla is just as amenable to a home cook's creative whims, yet it's not often someone says, "Hey, I feel like some quesadillas."

We're here to change that. That's why this week, Recipe SWAT Team is tackling quesadillas. And what we've created aren't the run-of-the-mill bean, cheese, and meat affairs. We erased all preconceptions (in some cases, even the concept of using cheese), and each thought to ourselves: What would I want in my ultimate quesadilla?
Here are a few highlights from this week:
A bold choice of ingredients makes for bold flavors in this Mango with Muenster and Skirt Steak Quesadilla Recipe. "Confidence is everything," says Anne Dolce, Cook editor, who created this recipe to stand out from the crowd. Did this unusual combination work? You be the judge.
Next, the non-dairy quesadilla may sound like an oxymoron but social media manager Nathan Cyphert makes this idea stick with his Roasted Eggplant and Spinach Quesadilla. Vegans rejoice.
Last, but not least, we'd like to give a special thanks to members of our Culinary Content Network for participating again this week. Don't miss out on Lori Rice's Ataulfo Mango and Jalapeño Quesadillas — ataulfo mangos (also known as champagne mangos), in case you haven't had them before, are small, pale yellow in color, and have creamier, sweeter, and smoother flesh than regular old Tommy Atkins mangos.
