Seamus Mullen Opening London Restaurant
Last month, The Daily Meal reported that chef Seamus Mullen of Tertulia, the award-winning West Village restaurant, would soon be opening an establishment in London. The rumors have finally been confirmed. Chef Mullen announced that he will be opening his first overseas restaurant at the Mondrian London at Sea Containers, a brand-new London hotel. Mullen will be collaborating with hotel executive chef Luke Rayment to bring the modern, primarily Spanish-style restaurant to life, with a menu featuring ingredients from the local Borough farmers market.
"The food will be influenced by both the Mediterranean and New York, with an emphasis on seasonal, flavorful, honest food," Mullen told Eater. "The flavors are bright, vibrant, assertive, with a backbone of wellness that firms up my belief that 'healthy' food should first and foremost be delicious food."
The restaurant will overlook the Thames River. The hotel itself will also feature an upscale cocktail bar called Dandelyan, featuring cocktails by Ryan Chetiyawardana, one of the UK's top mixologists.
