Red Iguana is know especially for the many varieties of flavorful moles but, everything from the classic cheese enchiladas to the exotic enmoladas, corn tortillas folded and filled with refried beans, topped with mole negro and pickled red onions, and sprinkled with queso fresco; are authentic and delicious. The restaurant is a family affair, founded in 9185 by Ramon and Maria Cardenas to share their passion for authentic Mexican cuisine. Maria passed away in 2002 but, the Cardenas children now run the restaurant, continuing in their parents footsteps, sharing the food they love.
