Marcus Samuelsson Pop-Up Restaurant In Bermuda
Marcus Samuelsson of Red Rooster Harlem has announced that he will open a two-month pop-up restaurant at the Fairmont Hamilton Princess hotel in Bermuda. The pop-up, Samuelsson at HP, will be open from June 3rd until August 4th and feature a Bermudian-inspired menu designed by chef Samuelsson, and executed by chefs de cuisine Leo Marino and Justin Levine, both of Red Rooster Harlem.
Samuelsson at HP will serve as a preview for the chef's upcoming restaurant at the hotel, slated to open in May 2015. The menu includes lots of fresh seafood and raw options, as well as large plates like grilled head-on shrimp with ginger and scallion sauce, and mustard-crusted lamb rack with red wine and pearl onions.
Desserts will include rum cake with strawberry and ginger salad, a dark and stormy sorbet, and a banana bread pudding parfait with passion fruit gel and chocolate. Finally, the pop-up's bar menu will feature "bespoke warm weather cocktails" including Rum Rum Punch and M City Grapefruit, both served in generous pitchers.
"I'm excited to create new flavors inspired by the rich, vibrant culture and history of Bermuda," says chef Samuelsson. "From fresh-caught, local fish to an array of Caribbean and Portuguese ingredients and traditions, there is such a wealth of inspiration to bring to the table."
