Irish Soda Bread
No yeast? No problem. Soda bread doesn’t call for any yeast, and you can switch up the recipe with ingredients you already have. For example: if you don’t have raisins, swap them out for dried cranberries or orange zest.

Ingredients
- 4 cup flour
- 1/4 cup sugar
- 1 1/2 teaspoon baking powder
- 1 1/2 teaspoon baking soda
- 3/4 cup raisins
- 2 eggs
- 6 tablespoon butter
- 2 cup buttermilk
- 1/2 teaspoon salt
Directions
- Combine all dry ingredients.
- Soften butter in the microwave.
- Beat the eggs well, and mix in the butter.
- Combine wet and dry ingredients.
- Roll the dough into two logs.
- Split dough to make two loaves.
- Roll into round shape.
- Score the dough with an X.
- Place the dough on floured pans.
- Bake at 325 degrees for 40 minutes or longer (should be golden brown on top).
- Enjoy with butter or your favorite jam.
