How To Make Chanterelle Vodka
Drink straight up in a martini glass or, à la chefs' forays, from any container available before heading into the woods.

- Place 2/3 cup of lightly packed dried chanterelles and the contents of a 750-mililiter bottle of fine-quality vodka in a large, clean jar.
- Cover and place in a dark place, swirling the jar every couple days.
- Strain through a fine-mesh strainer and discard the chanterelles.
- Pour into a clean bottle and store indefinitely in the freezer.
Note: Using dried chanterelles leaves the vodka clear. Fresh chanterelles make murky vodka.
