Healthy Cod Recipe
If you're looking for ways to eat more healthfully, eating more fish can be a good approach. And, cod is a healthy fish to try if you want something with a mild flavor and delicate texture; it's low in calories and high in protein and B vitamins.
One of the easiest ways to cook fish is to bake it in parchment paper; raw fish, vegetables, and seasonings are wrapped in parchment-paper packets and baked in the oven until the fish is cooked through and the vegetables are tender. This baked cod recipe does just that; pieces of cod are layered with flavorful fennel, onions, garlic, and olives and topped with heart-healthy olive oil and fresh parsley before being sealed and baked in parchment paper. In addition to keeping the fish nice and moist, the parchment also makes for super easy cleanup.
