Four Seasons Hotel Denver's Signature Buffalo Ribeye

One of the Four Seasons Hotel Denver's finest features is EDGE Restaurant, a trendy upscale steakhouse whose signature dish is the Buffalo Ribeye, which is aged for 21 days.

What's in the Buffalo Ribeye: The buffalo ribeye has a spicy and savory rub and huckleberry gastrique. EDGE Restaurants signatures sides to order with it include bubble and squeak which came from Simon Purvis, Executive Chef, and truffle macaroni and cheese balls

Inspiration for the Buffalo Ribeye: "Being a steakhouse, we thought it was important to have a wide variety of steaks. The buffalo ribeye exemplifies the Colorado West. It's buffalo, it's unique, it's edgy  ̶ a steak but different  ̶ and with our custom EDGE spicy & savory rub, plus the interesting huckleberry gastrique, it adds a very different and delicious flavor," said Dana Berry, public relations representative.
