Chef Michael Ferraro of Delicatessen and Macbar shared this buttermilk fried chicken recipe with us. Chef Ferraro is an alumnus from the Culinary Institute of America who quickly rose in the entrepreneurial side of the culinary world. He thinks fried chicken is an excellent addition to any game-day menu.
"Fried Chicken is the perfect family-style dish that's served during [a football game]," he says. "It can even be prepared ahead of time so you don't miss the first touchdown."
This buttermilk fried chicken is topped off with a ranch dressing that combines sour cream, buttermilk, Tabasco, and Worcestershire sauce to make a creamy, spicy topping. The chicken uses paprika, garlic powder, onion powder, Old Bay, cayenne pepper, and celery salt to create a tasty seasoning with just the right amount of spice. The buttermilk coats the chicken as well to create a thick, crispy crust surrounding the meat.
Fried chicken is a great dish to serve on any game day or at any tailgate. Everyone loves biting into a piece of juicy, salty, and crispy fried chicken while they enjoy a beer and watch football. It's also a great meal to throw together for a last minute dinner. Use the leftovers to make fried chicken sandwiches or chicken salad for the next day. This recipe is so good that you'll want to eat it all week long.
