Chef Justin Hancock Has Big Plans For His Las Vegas Restaurant Fresco Italiano
We were pleasantly surprised when we — for the first time — stepped into Fresco Italiano in Las Vegas to meet chef Justin Hancock and explore his restaurant's offerings. From what we saw and tasted, we recommend starting with the house-made charcuterie plate which features fresh burrata and a wide variety of imported, savory meat choices.
We highly suggest trying one of Fresco Italiano's flatbreads, which are made with imported Italian flour and arrive fresh from the pizza oven. The house specialty marinara is crafted from an old family recipe and definitely worth a taste. For the vegetable-lover, the rich eggplant parmesan has a plethora of creamy cheese, and when in combination with the marinara, creates a delicious marriage of flavors you won't want to miss out on.
In addition, carnivores can't go wrong with a perfectly prepared bone-in-veal Marsala served on a bed of homemade angel hair pasta. On the other hand, if you desire a treat from the sea, the Gamberetto Shrimp Fra Diavolo with a large langoustine is a classic that will not disappoint. All in all, the most unique dish we ate was chef Hancock's Porcini risotto that incorporated 15 mushroom varietals; this is a dish that will be remembered for quite some time.
Keep an eye on this young chef at Fresco Italiano as he brings his creativity to each section of his menu, from meat and seafood to pasta and risotto. This Italian establishment is sure to satisfy your cravings as well as your wallet.
