Burnt Corn, Kale and Lime Salad
"Creating delicious variations on the traditional side salad is something that I love to do. This recipe requires minimal preparation and can be put together in the 10 minutes before you serve your main meal. Kale is an ingredient that I tend to use a lot at home because of its amazing nutritional value. Adding lime juice to the salad dressing helps bring out the flavour of the other ingredients."
Kale Mac and Cheese
"When I was growing up in the middle of America, I loved and lived on mac and cheese. I mean, let's be honest, it is just SO good! However, most mac and cheese isn't exactly going to give you what you need nutritionally and it depletes the energy supply. So, for my kids' sake, I had to find a mac and cheese that tasted as good (if not better) AND filled them with all things good. This recipe takes 20 minutes, but you do need to do a little planning and place the cashews in a bowl of water the night before. Then you're ready to go when you come home the next evening."

"I think turmeric is one of the greatest spices we can add to our diets, especially because of its recently discovered link with fighting dementia. Ground turmeric is perfectly good, but grated fresh turmeric is even better.
