The Daily Meal: What is the mission of your blog?
Nicole Meyer: To take the stress and heart palpitations out of cooking! It should be fun, light, and an all-around fantastic experience from the shopping to the cleaning (well maybe not the cleaning). Let's try and use as little dishes as possible!
How did you get started with your blog?
It all started with Turkey Meatloaf in the park in my neighborhood with a group discussing random recipes... guess what mine was?! (Best part of the intro to my book, Cups, Sticks & Nibbles!)
What are some foods you can't live without?
Eggplant, New York pizza, sushi (uni in particular) almond butter, blueberries, and yogurt cheese!
What are some foods you can't stand?
Sun-dried tomatoes and canned beets. (Yuck, sorry!)
What is your proudest blog post?
My Roasted Tomato Eggplant Ragu with Baked Mozzarella Croutons! I had never made a soup before and was super nervous!
What is your biggest blog blunder?
Initially not posting links to Facebook, just pictures. I had no idea! What was I thinking?
What is your most memorable comment from a reader?
A cashier approached me in Pathmark Supermarket, one of those times when I grabbed a basket (and really should have taken a wagon) and heard her speaking about my blog to another customer. She was raving about my nibbles and my heart was literally melting through my chest!
What's on your cooking playlist?
Food Network TV and House Hunters. (They relax me!)

Skinny Kitchen, The Noble Pig, Skinny Sweets Daily.
What are some food apps you like?
Love Pinterest, Instagram, and StumbleUpon! Getting into Periscoping too. (I need help!)
What is the best thing about blogging?
Creating an environment where people can learn and feel less pressure about cooking and entertaining.
What is the worst thing about blogging?
All the social media that needs to get done.
What recipe are you currently obsessed with?
Eggplant & Spaghetti Casserole Light
What would even your most loyal followers be surprised to learn about you?
That I only cook about three times a week!
