Felidia Chef Fortunato Nicotra Headlines Extended Eataly Manzo Collaboration Series
Earlier in 2017, Manzo at Eataly was renovated and reopened its doors to showcase a menu by Chef Adam Hill with a farm-to-table focus. Later that year, the restaurant announced a guest chef collaboration program that featured the talents of Chef Marc Forgione, Michael White, Junghyun Park, Daniel Boulud, Tim and Nancy Cushman of the award-winning Covina and Janine Booth. The series allowed each chef to contribute a dish to Manzo's menu for one month, with proceeds from the dish going to a charity of their choice. Also, the menu included locally sourced ingredients that put a spotlight on area farms and farmers. All of it was a hit. Guests got to indulge in a unique dish by a star chef in a venue that is unlike any other in NYC. Plus, they were giving to charity at the same time. Due to the success, Manzo has decided to extended their program and for the next four months, guests at Eataly can eat with give-back once more. The program started up again in June and kicking off the extended program for July is NYC's star chef and Executive Chef at Felidia (Lidia Bastianich's first NYC restaurant) Fortunato Nicotra.

"I wanted to create a dish that celebrated both regions in Italy where I am from," he explained. What Chef created was Tutto Tonno: Semi Carpaccio, Tartare, Preserved, Tonnato Sauce, Norwich Meadows Farm Cucumber and Eggplant "Caviar."
The producer featured is Norwich Meadows Farm, a certified organic farm located in upstate New York that grows fresh, organic produce for greenmarkets in New York City and beyond and his charity for the month is Grow to Learn of GrowNYC, an environmental non-profit that runs a New York City farmers' market program, builds urban farms and community gardens, and teaches the city about recycling.

Also new in the program is the option to buy tickets to the chef kick off dinner featureing not just the guest chef's dish, but also collaboration dish with Manzo's Adam Hill and a sweet finish for dessert. In August, Manzo will be welcoming Chef Ali Laraia of The Sosta and featuring her dish, Corn Agnolotti with an Invincible Summer Farms Heirloom Tomato Pomodoro Sauce.
