Ingredients
- 15 ounce black beans
- 15 ounce corn
- 1/2 red onion, diced
- 1/4 cup crumbled feta cheese
- 3 teaspoon chopped cilantro, plus more for garnish
- 1/4 cup olive oil
- 3 tablespoon red-wine vinegar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Directions
- Place the beans in a large bowl. Add in the corn, red onion, feta cheese, and cilantro. Pour in the olive oil and red-wine vinegar. Season with salt and pepper. Mix ingredients together and let sit for 30 minutes for flavors to meld together. Garnish with a sprinkling of chopped cilantro.
