Tempeh Bacon Chunks

Ingredients
  • 2 tablespoon gluten-free tamari or low-sodium soy sauce
  • 1 tablespoon avocado oil or neutral vegetable oil
  • 1 tablespoon maple syrup
  • 1/2 tablespoon liquid smoke
  • 1/2 tablespoon nutritional yeast
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1 (8 oz/227 g) tempeh (about 2 cups crumbled)
  • sea salt, to taste
Directions
  1. Step 1: Preheat the oven to 425°F. Line a baking sheet with a Silpat mat or parchment paper.
  2. Step 2: In a mixing bowl, combine the 2 tablespoons tamari or soy sauce, 1 tablespoon oil, 1 tablespoon maple syrup, 1/2 tablespoon liquid smoke, 1/2 tablespoon nutritional yeast, 1/2 teaspoon smoked paprika and 1/2 teaspoon garlic powder.
  3. Step 3: Using your hands, tear the tempeh into small chunks directly into the marinade and toss to coat evenly.
  4. Step 4: Lay out the marinated tempeh chunks on the prepared baking sheet in one even layer, with chunks slightly spaced apart. Bake for 25 to 30 minutes, flipping halfway through the bake time, until drier-looking, golden brown and slightly caramelized on the edges.
  5. Step 5: Sprinkle with sea salt and enjoy. Store leftovers in the fridge and consume within 10 days.
