Grilled Indian-Spiced Flatbread

Ingredients
  • 2 tablespoon oil, divided
  • 1 cup onion, thinly sliced
  • 1 teaspoon mccormick gourmetâ„¢ organic ground turmeric
  • 1/2 teaspoon mccormick gourmetâ„¢ organic ground cumin
  • 1/2 teaspoon mccormick gourmetâ„¢ organic crushed red pepper
  • 1 package naan (2 pieces)
  • 2 vine-ripened tomatoes, sliced
  • 6 ounce goat cheese, crumbled
  • 1 tablespoon fresh mint, chopped
Directions
  1. Heat 1 tablespoon of the oil in medium skillet on medium heat.
  2. Add onion; cook and stir 3 minutes or until softened.
  3. Stir in turmeric, cumin and red pepper.
  4. Set aside.
  5. Brush tops of naan lightly with remaining 1 tablespoon oil.
  6. Place oiled-side down on the grill and close lid.
  7. Grill over medium heat 1 to 2 minutes or until grill marks appear on the bottom of the crust.
  8. Carefully flip crust over using tongs or spatula.
  9. Spread 1/2 of the onion mixture evenly on each crust.
  10. Top with tomatoes and goat cheese.
  11. Close lid and grill over low heat 1 to 2 minutes or until cheese is melted.
  12. Remove from grill and sprinkle with mint.
  13. Serve immediately.
