Ingredients
  • 8 medium carrots, grated (about 1 generous cup grated carrots)
  • 1 clove garlic, chopped
  • 1 shallot, chopped
  • 1 tablespoon chopped fresh ginger
  • 2 eggs
  • 1/2 cup chickpea flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon garam masala
  • 1 teaspoon kosher salt
  • 1 cup plain yogurt
  • 1/2 cup cilantro sprigs
  • 1/4 cup sliced green onions
Directions
  1. For the waffles, combine all ingredients in a mixing bowl.
  2. Cook in a greased, preheated waffle iron.
  3. Serve waffles hot with yogurt, cilantro, green onions.
