- 8 medium carrots, grated (about 1 generous cup grated carrots)
- 1 clove garlic, chopped
- 1 shallot, chopped
- 1 tablespoon chopped fresh ginger
- 2 eggs
- 1/2 cup chickpea flour
- 1/2 teaspoon baking powder
- 1 teaspoon garam masala
- 1 teaspoon kosher salt
- 1 cup plain yogurt
- 1/2 cup cilantro sprigs
- 1/4 cup sliced green onions
- For the waffles, combine all ingredients in a mixing bowl.
- Cook in a greased, preheated waffle iron.
- Serve waffles hot with yogurt, cilantro, green onions.
