Buzzed Bunny Easter Cocktail

Ingredients
- 1 small piece of ginger root, finely grated
- 1 ounce sweetened pineapple juice
- 3 ounce fresh carrot juice
- juice from half of a lemon
- 1.5 ounce gin
- mint sprig
Directions
- Prepare cocktail shaker with ice.
- Grate ginger directly into cocktail shaker.
- Add remaining pineapple juice, carrot juice, lemon juice and gin.
- Shake cocktail shaker vigorously.
- Strain over ice into cocktail glass.
- Garnish with lemon slice and fresh mint sprig.
