Baked Egg In An Avocado

Ingredients:
1 avocado
1 egg
Salt and pepper to taste
Directions:
1. Preheat oven to 425°.
2. Slice avocado in half.
3. Scoop out pit to create hole for the egg.
4. Place avocado in a small baking cup. Line with tinfoil for minimal clean-up.
5. Crack the egg into the hole.
6. Bake for 15-20 minutes.
7. Season with salt and pepper, or seasoning of your choice. If you have them, sprinkle chopped scallions on top.
