Old Cuban

This decadent interplay of well-aged rum, with spicy bitter, sweet and sour elements, is accentuated by the acidity of champagne. The Old Cuban is a well-balanced drink, refreshing, strong, and works well for any season. It was created by bartender Audrey Saunders in 2001 at the New York restaurant Beacon.

This classic cocktail builds off of a mojito by using an aged dark rum as its base and bubbly champagne in place of the traditional club soda.

Ingredients
  • 5 mint leaves
  • 1 ounce simple syrup
  • ¾ ounce fresh lime juice
  • 1 dash of angostura bitters
  • 1 ½ ounces aged dark rum
  • 2 ounces champagne
Directions
  1. In a mixing glass, lightly muddle 5 mint leaves with 1 ounce simple syrup, ¾ ounce fresh squeezed lime juice, and a dash of Angostura bitters. Add 1½ ounces of aged or anejo rum. Shake well over ice and finely strain into a chilled champagne glass. Top with champagne, and garnish with a mint leaf.
