Simple Smashed Sweet Potatoes Recipe

Ingredients
  • 3 pounds sweet potatoes (about 3 large), washed, dried, and sliced into ½-inch rings.
  • 4 tablespoons extra-virgin olive oil, divided
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • ¼ teaspoon freshly cracked black pepper
  • 2 tablespoons crumbled feta cheese
  • 3 sprigs thyme leaves
  • 2 tablespoons sliced scallions
Directions
  1. Preheat the oven to 450 F.
  2. Line a sheet pan with parchment paper.
  3. Place the potatoes in a large pot filled with cold water.
  4. Bring the water to a boil. Boil the potatoes until they are just fork tender, about 15 minutes.
  5. Strain the potatoes and let them cool slightly.
  6. Spread 2 tablespoons olive oil on the prepared sheet pan.
  7. Place the potatoes on the sheet pan and smash them gently with the bottom of a glass.
  8. Drizzle the remaining olive oil over the potatoes.
  9. Sprinkle the potatoes with the salt, pepper, and garlic powder.
  10. Place the sheet pan in the oven and roast the potatoes for 25 minutes, or until golden and crispy.
  11. Remove the potatoes from the oven and top with the crumbled feta cheese, sliced scallions, and thyme leaves. Serve immediately.
