Marinated Cucumber-Lime Salmon Recipe

Ingredients
  • 1 tablespoon rice vinegar
  • Zest and juice of 1 lime
  • 1 tablespoon honey
  • ½ teaspoon sea salt, divided
  • 1 clove garlic, minced
  • ¼ teaspoon minced fresh ginger
  • 2 tablespoons olive oil
  • 2 (5-ounce) salmon fillets
  • 1 English cucumber, diced (about 1 cup)
  • 1 tablespoon chopped fresh cilantro
Directions
  1. Preheat oven to 375 F.
  2. Line a small sheet pan or oven-proof dish with parchment paper.
  3. In a medium-sized bowl, whisk together rice vinegar, lime zest and juice, honey, ¼ teaspoon salt, garlic, ginger, and olive oil.
  4. Place salmon on the prepared sheet pan. Pour 2 tablespoons of the marinade on top and sprinkle with the remaining ¼ teaspoon sea salt. Allow to marinate for 10 minutes.
  5. Toss diced cucumber and chopped cilantro in the remaining marinade until combined. Set aside.
  6. Bake salmon for 8-10 minutes, or until cooked to your liking.
  7. Optional: Broil salmon for 2-3 minutes for a golden top.
  8. Top salmon with marinated cucumbers and cilantro, and serve immediately
