Avocado Shrimp Salad Recipe

Ingredients
½ pound shrimp, peeled and deveined
1 teaspoon dried basil
salt and pepper, to taste
2 tablespoons olive oil
1 clove garlic, minced
juice of 3 lemons
3 medium avocados
2 tablespoons chopped cilantro
½ pound mixed salad greens
Directions
Season shrimp with dried basil and salt and pepper. Set aside.
Heat olive oil in the pan over medium heat.
Add shrimp and cook for 2 minutes.
Add garlic to pan and turn shrimp over. Cook for approximately 2 more minutes, until garlic is fragrant and shrimp are opaque and curled slightly.
Deglaze pan with lemon juice. Remove pan from heat and transfer shrimp to a plate. Reserve pan drippings.
Place avocados, cilantro, and pan drippings in a food processor or blender. Blend until creamy.
Toss shrimp, avocado mixture, and greens together.
Serve immediately.
