Fall Favorites Salad with Cranberry Dressing Recipe

Ingredients
  • 1 cup fresh cranberries
  • 2 tablespoons olive oil
  • 1 teaspoon white wine vinegar
  • 2 tablespoons sugar
  • 1 teaspoon Dijon mustard
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 5 ounces spring mix
  • ¼ cup blue cheese
  • ¼ cup canned pears, diced
  • ¼ cup dried cranberries
  • ¼ cup chopped walnuts
Directions
  1. Into a blender, add the cranberries, olive oil, vinegar, sugar, Dijon, salt, and pepper.
  2. Blend. Add water to thin out consistency, if needed.
  3. In a large serving bowl, add the spring mix, blue cheese, diced pears, dried cranberries, walnuts, and dressing.
  4. Toss and serve.
