Fall Favorites Salad with Cranberry Dressing Recipe

Ingredients
1 cup fresh cranberries
2 tablespoons olive oil
1 teaspoon white wine vinegar
2 tablespoons sugar
1 teaspoon Dijon mustard
½ teaspoon salt
¼ teaspoon pepper
5 ounces spring mix
¼ cup blue cheese
¼ cup canned pears, diced
¼ cup dried cranberries
¼ cup chopped walnuts
Directions
Into a blender, add the cranberries, olive oil, vinegar, sugar, Dijon, salt, and pepper.
Blend. Add water to thin out consistency, if needed.
In a large serving bowl, add the spring mix, blue cheese, diced pears, dried cranberries, walnuts, and dressing.
Toss and serve.
