Summer Berry Tiramisu Recipe

Ingredients
  • 16 ounces strawberries, sliced
  • 1 cup sugar, divided
  • 1 ½ cup heavy whipping cream
  • 8 ounces mascarpone cheese
  • 14 ounces ladyfingers
  • 18 ounces blueberries
  • 16 ounces raspberries
Directions
  1. Make a strawberry simple syrup by adding the strawberries, 1/4 cup sugar, and enough water to come up about halfway up the berries to a small saucepan. Bring to a boil. Lower to a simmer. Simmer for 10 minutes.
  2. Strain out strawberries, collecting the pink syrup for later.
  3. In the bowl of a stand mixer, add the heavy whipping cream and remaining sugar. Beat using the whisk attachment until soft peaks form. Then, add in the mascarpone and continue to beat until stiff peaks form.
  4. Dip lady finger cookies gently in strawberry syrup. Then, place in the bottom of an 8x8 inch baking dish, until the bottom is covered with a layer of dipped cookies.
  5. Spread about half of the cream mixture on top of the cookies.
  6. Sprinkle with about half of the raspberries and blueberries.
  7. Repeat a layer of dipped ladyfingers, cream, and berries.
  8. Chill the fridge for at least 1 hour before serving.
