Buffalo Chicken Dip Recipe
There's just something about a hearty dip that brings people together. If you're a fan of buffalo wings, we know that you will love this buffalo chicken dip. It contains shredded chicken, buffalo sauce, cream cheese, and blue cheese (or ranch) dressing, transforming this classic happy hour wing into a dip.
Recipe developer Jessica Morone came up with this simple recipe that you'll be tempted to make on a regular basis. "My favorite thing about this recipe is the flavor of it. I'm actually not even a person who loves buffalo chicken flavor all that much, not like my husband, who will eat buffalo chicken every single day if given the option, but I absolutely love this dip," Morone raves. "The dip is super creamy from the cream cheese and the dressing, and with the heat from the hot sauce, it makes the dip incredibly delicious."
"This is great for any kind of event, like if you are having friends over to watch sports, going to a tailgate party, or as an appetizer for all the upcoming holidays," Morone says. "You could also cut the recipe in half if you just want to make it for a smaller get-together, or just for yourself."
Gather the ingredients for this buffalo chicken dip
To start, you will need cream cheese, blue cheese or ranch dressing, cooked shredded chicken, and cayenne pepper hot sauce, such as Frank's Red Hot sauce. The recipe also calls for a few spices like garlic powder, salt, and pepper. Be sure to also pick up shredded cheddar cheese, green onions, and blue cheese crumbles. "People tend to have pretty strong opinions on whether buffalo chicken goes better with ranch or blue cheese," Morone notes. "You can choose whichever one you prefer, it tastes great with either option, but I prefer the blue cheese dressing."
Once you have those ingredients, you can make this buffalo chicken dip.
Mix the cream cheese and the dressing
Preheat the oven to 350 F. Next, spray an 8-x8-inch baking dish with cooking spray. This helps prevent the dip from sticking to the bottom of the dish.
Take out a large bowl, and toss in the softened cream cheese, and the blue cheese or ranch dressing. "I just used a rubber spatula to combine the cream cheese and the dressing; if the cream cheese is soft enough, it will be really easy to combine. If the cream cheese isn't too soft, even after leaving it out for a while, you can microwave it for 15 to 30 seconds," Morone notes.
Add the chicken and spices
Next, add shredded chicken in with the cream cheese mixture. "You can either cook your own chicken, or just buy a pre-cooked rotisserie chicken and shred it. I love to buy cooked rotisserie chickens, shred up the meat, and save it for various recipes, so I recommend doing that for this recipe because it really cuts down on time," Morone says.
Next, add in the hot sauce, garlic powder, salt, pepper, and half of the shredded cheddar cheese. Use a spoon or spatula to combine. "I think the garlic in this is the special ingredient, it isn't so much garlic that it is overwhelming, but it adds a nice amount of garlicky flavor," Morone says.
Bake and serve the buffalo chicken dip
Add the dip into the prepared baking dish, and top with the remaining half of the cheddar cheese. Cook for 20 minutes, or until the cheese on top melts, and the sides get nice and bubbly. Carefully remove the dip from the oven, and top with the sliced green onion and the blue cheese crumbles.
There are many options to use for dipping like chips, crackers, or even veggies. "You can really serve anything you want with this dip; everything seems to go with it, but my favorite thing is Fritos Scoops. Because of their size and shape, they are the perfect little dipping chips, and I love the flavor of the corn chips with buffalo chicken dip," Morone adds. "You can save leftovers covered in the fridge for up to 3 days, and just reheat it before serving."
- 1 8-ounce package cream cheese, softened
- 1 cup blue cheese or ranch dressing
- 2 cups cooked shredded chicken
- 1 cup cayenne pepper hot sauce
- 1 teaspoon garlic powder
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 2 cups shredded cheddar cheese, divided
- 2 tablespoons green onions, chopped
- ½ cup blue cheese crumbles
- Preheat the oven to 350 F. Spray an 8-x8-inch baking dish with cooking spray, set aside.
- In a large bowl combine the cream cheese and dressing, and mix until smooth.
- Add the shredded chicken, hot sauce, garlic powder, salt, pepper, and half of the cheddar cheese to the bowl, and mix until combined. Transfer the mixture to the prepared baking dish, and top with the remaining cheddar cheese.
- Bake for 20 minutes, until the cheese has melted, and the sides are bubbly. Sprinkle the top with the green onions, and blue cheese crumbles. Serve hot with your choice of chips, crackers, and veggies.
