Grilling and barbecuing don't have to be all about burgers, steaks, and hot dogs; vegetarian burgers are easy to make and easily customizable. Vegetarian burgers can be made using virtually any mix of beans and vegetables; whatever you have on hand will work. Vegetarian Chickpea Burgers
Ingredients
  • 1 15.5-ounce can garbanzo beans, drained and rinsed
  • 1 small yellow onion, diced small
  • 1 clove garlic, minced
  • zest of 1 lime
  • 1 handful cilantro leaved, chopped
  • 2 teaspoon cumin
  • ½ teaspoon cayenne
  • salt, to taste
  • freshly-ground black pepper, to taste
  • 1 large egg, lightly beaten
  • 1½ - 1¾ cup breadcrumbs, such as panko
  • ½ cup plain yogurt
  • juice of 1 lime
  • 1 handful of cilantro leaves, chopped
  • salt, to taste
  • red onion slices
  • 4 miniature whole-wheat pitas
Directions
  1. Combine all the ingredients in a large bowl. Use your hands to mix, mashing some of the beans as you go. Form the mixture into 4 patties.
  2. Grill the patties until they are cooked through, about 3—4 minutes per side.
  3. In a medium bowl, combine the yogurt, lime juice, and cilantro. Season with salt, to taste.
  4. Top the grilled burgers with the yogurt sauce and red onion slices. Serve on miniature whole-wheat pita.
