Vegetarian Chickpea Burgers
Grilling and barbecuing don't have to be all about burgers, steaks, and hot dogs; vegetarian burgers are easy to make and easily customizable. Vegetarian burgers can be made using virtually any mix of beans and vegetables; whatever you have on hand will work. This recipe uses chickpeas, onions, and cumin; after the patties are grilled they're super smoky and flavorful.

Ingredients
- 1 15.5-ounce can garbanzo beans, drained and rinsed
- 1 small yellow onion, diced small
- 1 clove garlic, minced
- zest of 1 lime
- 1 handful cilantro leaved, chopped
- 2 teaspoon cumin
- ½ teaspoon cayenne
- salt, to taste
- freshly-ground black pepper, to taste
- 1 large egg, lightly beaten
- 1½ - 1¾ cup breadcrumbs, such as panko
- ½ cup plain yogurt
- juice of 1 lime
- 1 handful of cilantro leaves, chopped
- salt, to taste
- red onion slices
- 4 miniature whole-wheat pitas
Directions
- Combine all the ingredients in a large bowl. Use your hands to mix, mashing some of the beans as you go. Form the mixture into 4 patties.
- Grill the patties until they are cooked through, about 3—4 minutes per side.
- In a medium bowl, combine the yogurt, lime juice, and cilantro. Season with salt, to taste.
- Top the grilled burgers with the yogurt sauce and red onion slices. Serve on miniature whole-wheat pita.
