The Sunset Marquis Celebrates 50th Anniversary With New Restaurant Opening
As a part of their 50th anniversary celebrations, the Sunset Marquis has opened Cavatina restaurant inside the hotel. The new eatery is led by renowned Chef & Restaurateur Michael Schlow whose accolades include The James Beard Award of Excellence for Best Chef, Food & Wine's Best New Chef in America, and Santé Magazine's Best Chef in America.
Considered one of the most respected culinary professionals in the U.S., Schlow's menu is designed around interesting yet uncomplicated dishes. The restaurant is his first venture on the West Coast.

"I'm a huge fan of Sunset Marquis," says Schlow, enlisted to create the restaurant's vision. "It is one of my favorite hotels in the world and the idea of being part of the Food and Beverage team and getting to cook with all of the beautiful products California has to offer, is a dream come true. We want to cook the foods and products that are local, then present them with a fresh and full flavored approach. Mother Nature has done most of the work, all we need to do is add a little acid, salt, and chiles, to make the food sing."
Seven days a week, Cavatina will serve breakfast and brunch on Sundays. During lunch hours, the restaurant will serve café-style meals like delicious salads, sandwiches, and Schlow's award-winning burgers. Broken up into four categories — Snacks, Crudo, Small-Plates and Entrees — the dinner menu includes items such as Cauliflower Panna Cotta with lobster and caviar; Beef Tongue with lentils, rosemary, and salsa verde; and Simply Prepared Mediterranean Sea Bass with shaved vegetables.
The day-to-day operations will be taken care of Sunset Marquis Executive Chef Roger Eggleston. Previously, Eggleston worked at Montage of Beverly Hills and is praised for his work in transforming Ten Pound restaurant into a true dining destination. Along his culinary journey, Eggleston was fortunate to also work with three Michelin starred chefs Alain Ducase, Daniel Humm, and his mentor Christopher Kostow.
"The combination of the musical history here, and the food we're creating makes the Sunset Marquis a very special place, truly unlike anything else," said Eggleston. With its central location between in West Hollywood and a favorite among celebrities, the Sunset Marquis' new restaurant will be another great addition to the neighborhood.
