Spicy Barbecued Pork Loin

Ingredients
- 1 tablespoon vegetable oil
- 1 medium onion, finely diced
- 1/2 cup ketchup
- 1/4 cup dark brown sugar, packed
- 2 tablespoon cider vinegar
- 1 tablespoon tabasco brand original red sauce
- 1 teaspoon salt, divided in half
- 1 boneless pork loin (about 2 pounds; 6 inches long)
Directions
- Preheat the oven to 350 degrees.
- Heat the vegetable oil in a small 2-quart saucepan over medium heat. Add the onion and cook for about 5 minutes or until the onion has softened. Stir in the ketchup, brown sugar, vinegar, Tabasco sauce, and 1/2 of the teaspoon of salt. Set aside 1/2 a cup of the sauce.
- Rub the outside of the pork roast with the remaining 1/2 a teaspoon of salt. Place the pork in a roasting pan. Pour the sauce mixture over top to completely cover the pork. Cover the pan tightly with foil and place it in the oven. Cook for 1 hour.
- Meanwhile, preheat the grill to medium. Place the roast pork on the grill. Cook the covered pork for 30 minutes, turning it frequently, and brushing it with the reserved ½ cup of sauce until the meat reaches an internal temperature of 160 degrees.
- Serving Suggestion: Serve with sautéed green beans and sliced red onion tossed with cooked, crumbled bacon.
