Smokiness is a virtue we all can appreciate in our food, and this grilled cheese takes it to the fourth degree. Everything except for the bread has a smoky quality to it: the Cheddar is smoked, as are the ham and bacon, as well as the chipotle mayo. And as opposed to slathering it in butter, this cheese is "grilled" in a lighter, mess-free way: It's wrapped in aluminum foil and pressed down onto a pan until it's golden brown and delicious.  If you like your food smoky, this one's for you! The Smoky: Grilled Cheese with Smoked Cheddar, Ham, and Bacon
Ingredients
  • 2 slices ham
  • 2 tablespoon chipotle mayonnaise (or regular mayonnaise, if unavailable)
  • 4 slices smoked cheddar
  • 4 strips bacon, cooked
  • 4 slices white bread, preferably pullman loaf
Directions
  1. Cook the ham partially (in order to crisp it up) by either placing it in a hot pan for a couple of minutes, in a hot oven, or in the microwave for about 30 seconds until it loses about half of its moisture.
  2. Spread ½ tablespoon of the chipotle mayonnaise on all slices of bread. Set 2 slices aside as top slices.
  3. On the bottom slices, place 1 slice of cheese, followed by 2 strips of bacon, 1 slice of ham, and the second slice of cheese, before adding on the top slices of bread.
  4. Wrap the sandwiches in aluminum foil and place in a pan over medium-high heat. Press down with another pan, a brick, etc. for about 5 minutes, flip, and repeat.
  5. Remove from the pan when the cheese is melted and the bread is golden brown. Enjoy.
