Ingredients
- 1 pound dried beans, soaked
- 1/2 green bell pepper, seeded
- 2 tablespoon olive oil
- 1 medium onion, chopped
- 1 clove garlic, crushed
- 1 teaspoon dried oregano
- 1/2 cup tomato sauce
- 1 tablespoon tomato paste
- 1 large potato, peeled and cubed
- 1/2 teaspoon salt
Directions
- Place the beans in a pot with 8 cups of water and the green bell pepper and bring to a boil. Cover and boil over moderate-low heat until the beans are tender.
- In a skillet or frying pan, heat the olive oil and add the onion, garlic, oregano, tomato sauce, and tomato paste. Sauté on moderate heat for 5 minutes.
- Add onion and tomato mixture to the beans and add the potato and salt.
- Cover and cook over high heat until water is boiling, about 5 minutes.
- Lower the heat and simmer, covered, for 30 minutes or until beans are completely tender sauce has thickened.
