If you want to go meatless for game day, we have just the recipe. This veggie burger is perfect for grilling at tailgates or topping your salad.

Ingredients
  • 1/2 cup onion
  • 1 clove garlic, minced
  • 1 cup yellow corn
  • 1/4 cup spinach, chopped
  • 1 can pinto beans
  • 1 tablespoon lime juice
  • 3 tablespoon salsa
  • 2 teaspoon cumin
  • 2 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 cup oats
  • 1/4 cup cashews, chopped
  • 1/4 cup cilantro
  • ball park burger buns
Directions
  1. Heat two tablespoons of olive oil in a pan on medium heat. Toss in the onions, garlic, corn, and spinach until softened.
  2. Transfer the mixture to a food processor and pulse with beans, lime juice, salsa, cumin, chili powder, salt, and pepper until combined. Then, add in oats, cashews, and cilantro; pulse.
  3. Form into balls and flatten into patties for grilling.
  4. Transfer the patties to a pan and grill for two to three minutes on each side.
  5. Let cool for a couple minutes and put in between Ball Park Burger Bun with your favorite toppings.
