Pinto Bean Veggie Burger
If you want to go meatless for game day, we have just the recipe. This veggie burger is perfect for grilling at tailgates or topping your salad.

Ingredients
- 1/2 cup onion
- 1 clove garlic, minced
- 1 cup yellow corn
- 1/4 cup spinach, chopped
- 1 can pinto beans
- 1 tablespoon lime juice
- 3 tablespoon salsa
- 2 teaspoon cumin
- 2 teaspoon chili powder
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 cup oats
- 1/4 cup cashews, chopped
- 1/4 cup cilantro
- ball park burger buns
Directions
- Heat two tablespoons of olive oil in a pan on medium heat. Toss in the onions, garlic, corn, and spinach until softened.
- Transfer the mixture to a food processor and pulse with beans, lime juice, salsa, cumin, chili powder, salt, and pepper until combined. Then, add in oats, cashews, and cilantro; pulse.
- Form into balls and flatten into patties for grilling.
- Transfer the patties to a pan and grill for two to three minutes on each side.
- Let cool for a couple minutes and put in between Ball Park Burger Bun with your favorite toppings.
