Vegetarian Mushroom Tacos

Ingredients
- 1 tablespoon oilve oil
- 6 ounce cremini mushrooms, sliced
- 1 yellow onion, chopped
- 1 poblano pepper, sliced thinly
- 1 teaspoon ground cumin
- 1/4 teaspoon salt
- juice of one orange
- juice of half lime, plus one lime wedge
- 8 six-inch tortillas, warmed
- 1/4 cup feta cheese
- 1 tablespoon chopped cilantro
Directions
- Heat the olive oil in large skillet over medium heat. Add the mushrooms, onion, and poblano pepper. Cook until the onions are translucent and the mushrooms are browned, about 7-10 minutes. Add the cumin, salt, orange juice, and lime juice. Stir, allowing the juice to cook off a bit.
- Fill the tortillas with the mushroom mixture, and top with the feta cheese and cilantro. Serve with a lime wedge.
