  • 1 tortilla wrap
  • 3 1/2 ounce spinach
  • 1 small can tomato purée
  • 4 eggs, preferably free-range
  • ground pepper, to taste
Directions
  1. Spread tomato purée onto the tortilla wrap.
  2. Quickly blanch spinach by dropping it into a pot of boiling water for 20 seconds, then quickly move it into a separate vessel and place it under cold running water to stop the cooking. Pat spinach dry and arrange on the center of the tortilla.
  3. Poach eggs by cracking them into a pan of gently simmering water (for best results, try making a little whirlpool in the water before adding eggs). Poach for approximately four minutes, and then arrange the poached eggs on the tortilla. Season with ground pepper.
  4. Place egg-topped tortillas in a preheated oven at 350°F for five minutes to warm through. Recipe serves four but can be doubled or tripled to serve more at Super Bowl celebrations.
