Ingredients
  • 2 pouches salmon, such as starkist's lemon dill salmon creations
  • 2 cup zucchini, "noodles"
  • 2 cup brussels sprouts, shredded
  • 1 red pepper, diced
  • 1 cup cannellini beans, rinsed and drained
  • 1/3 cup extra virgin olive oil
  • 3 tablespoon white wine vinegar
  • 1/4 teaspoon minced garlic
  • 1/4 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
Directions
  1. Mix zucchini “noodles”, Brussel sprouts, red pepper and beans in medium bowl.
  2. Toss the noodle salad with the dressing. (recipe for dressing below)
  3. Divide salad onto 2 plates and top each with a pouch of salmon.
  4. In a small bowl whisk oil, vinegar, garlic and salt and pepper.
