Ingredients
- 10 purple potatoes, cubed
- 2 medium red onions, cubed
- 2 cup of vegetables in season, cubed
- 4 cloves garlic, crushed
- 4 tablespoon olive oil
- 3 sprigs rosemary, finely chopped
- salt and pepper to taste
Directions
- Preheat the oven to 450 degrees.
- In a large bowl, toss the vegetables, garlic, and rosemary in the olive oil and mix to coat. Spread the mixture evenly in a roasting pan. Season with salt and pepper.
- Place in the oven and roast for roughly 20 minutes or until golden brown and thoroughly cooked.
