Ingredients
- 1 package red lentil penne, cooked
- 1/3 pound green beans
- 1/3 pint grape tomatoes, halved
- 2 tablespoon olive oil
- 3 garlic cloves, shaved
- 1 tablespoon parsley, chopped
- salt and pepper, to taste
- chile flakes, to taste
Directions
- Cook green beans in boiling salted water for 5 minutes. Shock in an ice bath to stop the cooking and set the color. Drain then slice into thirds.
- Heat oil in a sauté pan over medium-high heat. Add garlic and cook 1 minute. Add beans and tomatoes to warm through.
- Toss bean mixture with penne, parsley, salt and pepper, and chile flakes.
