Pumpkin Chip "Chipkins"

Try adding some pumpkin chips to your fall menu

"Sure, you could stick to making the traditional pumpkin treats, such as pies, breads and cookies, but these treats only contribute to the stereotypical notions that this time of the year is insanely gluttonous. In fact, a majority of people have never thought to eat pumpkin on its own. Well, it's time to let pure pumpkin shine, and this recipe for Pumpkin Chips does exactly that! Forget potato chips; indulge in a handful of chipkins instead!"

Ingredients

For the Chipkins

  • Small, sugar pumpkin (not a large carving pumpkin)
  • Olive oil or coconut oil, for coating
  • 2 1/2  Tablespoons  pumpkin pie spice
  • Pumpkin seeds, optional

Directions

For the Chipkins

Preheat your oven to 140 degrees while you chop your pumpkin into slices.

Spread sliced pumpkin on baking sheet (lined with foil for quick clean up), and spray or massage with olive oil (or coconut oil)

Sprinkle with seasonings of choice, and “dehydrate” in the oven for roughly 6 hours. 

Shove an oven mitt or a kitchen towel between the oven door and the oven, to help let the moisture evaporate. 

Every hour or so, check on your pumpkin and mix accordingly.

After 6 hours (depending on your oven's efficiency… Let cool and then SHOVE IN YOUR FACE… Without guilt!)
