Pineapple And Mango Rum-Glazed Pancakes

Ingredients
- 1 1/2 cup all-purpose flour
- 3 1/2 teaspoon baking powder
- 1 teaspoon salt
- 1 tablespoon white sugar
- 1 1/4 cup milk
- 1 egg
- 3 tablespoon butter, melted
- 3 ounce pineapple, diced
- 3 ounce mango, diced
- 3 ounce blueberries
- 1 strawberry, sliced
- 1 tablespoon sour cream
- 1 ounce rum, such as bambarra rum reserve
- 2 ounce maple syrup
- fresh mint
Directions
- In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
- Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot
- Mix the rum and maple syrup together
- Diced the mango and pineapple
- Dress the fruits on top of the pancakes, pour the syrup, the sour cream and mint.
