Marinated Grilled Fish Skewers

Ingredients
  • 1 1/2 pound firm white fish
  • 1/4 cup extra-virgin olive oil
  • 1/4 cup lemon juice
  • 3 tablespoon cilantro, finely chopped
  • 2 cloves garlic, crushed
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon cumin
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper
  • sliced lemon wedges
  • chopped cilantro, for garnish
Directions
  1. Cut the fish into 1 ½ inch cubes.
  2. In a small bowl, whisk together the olive oil, lemon juice, cilantro, garlic, paprika, salt, cumin, turmeric, and cayenne pepper.
  3. Place the fish chunks into a baking dish. Pour the marinade over the fish chunks and stir to coat. Cover with plastic wrap and marinate for 30 minutes.
  4. Preheat the grill. Divide the fish chunks evenly between 4 skewers.
  5. Grease the grill generously. Grill the skewers for 10 minutes, turning once half way through, until the edges are browned and the fish is cooked through. Serve garnished with chopped cilantro and with a squeeze of lemon juice.
