An avocado is the perfect vessel for this heart-healthy mix of veggies. The bright notes lemon and dill make this salmon salad really pop with flavor.
Combine the salmon, bell pepper, cucumber, carrot, onion, almonds, parsley and capers in a bowl.
Rub the cut side of each avocado with the lemon half and set each on a serving plate. Spoon the salmon salad onto the avocado allowing any extra to cascade onto the plate.
