Pasta salads are great; they’re versatile, easy to make and store, and are a crowd favorite at any dinner party, but some interpretations can be a little caloric. Swapping out traditional pasta for tofu noodles makes this pot-luck classic much healthier.

Ingredients

For the Pasta Salad

  • Packages House Food's tofu shirataki
  • 2  Tablespoons  black olives, sliced
  • 2  Tablespoons  kalamata olives, sliced
  • 1/3  Cup  salami, chopped
  • 1/2  Cup  cucumber, chopped
  • 1  Cup  cherry or plum tomatoes, sliced in half
  • 3  Tablespoons  olive oil
  • 2  Tablespoons  red wine vinegar
  • Salt and pepper to taste

Directions

For the Pasta Salad

Prepare Tofu Shirataki according to package instructions, and cut noodles into manageable sizes. Combine the noodles, olives, tomatoes, cucumbers, and salami in a mixing bowl.

Whisk together olive oil and red wine vinegar, and season with salt and pepper. 

Toss salad with dressing, and chill one hour before serving.
