Pasta salads are great; they’re versatile, easy to make and store, and are a crowd favorite at any dinner party, but some interpretations can be a little caloric. Swapping out traditional pasta for tofu noodles makes this pot-luck classic much healthier.
Prepare Tofu Shirataki according to package instructions, and cut noodles into manageable sizes. Combine the noodles, olives, tomatoes, cucumbers, and salami in a mixing bowl.
Whisk together olive oil and red wine vinegar, and season with salt and pepper.
Toss salad with dressing, and chill one hour before serving.
