Italian "Pasta" Salad

Recipe Courtesy of House FoodsPasta salads are great; they’re versatile, easy to make and store, and are a crowd favorite at any dinner party, but some interpretations can be a little caloric. Swapping out traditional pasta for tofu noodles makes this pot-luck classic much healthier.

Ingredients
  • 2 packages house food's tofu shirataki
  • 2 tablespoon black olives, sliced
  • 2 tablespoon kalamata olives, sliced
  • 1/3 cup salami, chopped
  • 1/2 cup cucumber, chopped
  • 1 cup cherry or plum tomatoes, sliced in half
  • 3 tablespoon olive oil
  • 2 tablespoon red wine vinegar
  • salt and pepper to taste
Directions
  1. Prepare Tofu Shirataki according to package instructions, and cut noodles into manageable sizes. Combine the noodles, olives, tomatoes, cucumbers, and salami in a mixing bowl.
  2. Whisk together olive oil and red wine vinegar, and season with salt and pepper.
  3. Toss salad with dressing, and chill one hour before serving.
