Ingredients

For the Sweet Potato Latkes

  • 2 Pouches  tuna, such as StarKist Kid’s Creations® Honey Barbeque Tuna
  • 4  Cups  sweet potato, shredded (~1 large sweet potato)
  • 1/4  Cup  green onion, chopped
  • 1/2  Cup  almond meal
  • 1-2  Tablespoon  chili powder
  • 1/4  Teaspoon  salt
  • 1/4  Teaspoon  ground black pepper
  • Eggs, beaten
  • 1/2  Cup  red cabbage, shredded
  • Avocado, diced

Directions

For the Sweet Potato Latkes

Preheat oven to 400°F.  Spray 1 large baking pan with cooking spray.

Shred sweet potato in food processor or with a grater and place in a large bowl.  Mix in green onion.

In a small bowl stir together almond meal, chili powder, salt and pepper.  Add to the sweet potatoes and onions and combine.

Stir in eggs and gently mix until well combined.

Drop ~ ¼ cup of the mixture onto the baking pan and pat down. 

Bake for 6 – 8 minutes, until lightly browned and firm.

Place on serving platter and top with 1 – 2 Tbsp. of tuna, shredded cabbage and avocado.
