Healthy Blueberry-Peach Cobbler

Ingredients
- 1 cup fresh blueberries
- 2 medium peaches, thinly sliced
- 1 teaspoon cornstarch
- 1/2 teaspoon vanilla extract
- 1/4 cup coconut-almond milk blend
- 1 tablespoon maple syrup
- 1/2 cup granola
Directions
- Preheat the oven to 325 degrees F.
- Combine the fruit, cornstarch, and vanilla extract in a bowl, and stir carefully, to avoid breaking the berries.
- Combine the remaining ingredients in a microwave-safe bowl. Microwave in 30 second increments until the granola has softened and most of the liquid has been absorbed. If there is excess liquid, pour it off.
- Divide fruit between 2 individual oven-safe dishes. Top with dollops of the granola mixture, spreading it evenly over the fruit.
- Place in the center of the oven and bake for 20-25 minutes, until the granola starts to brown, and the fruit is bubbling.
- Turn the broiler on to high and broil for 5-10 minutes, until the granola is crisp again.
