- 2 tablespoon butter
- 6 eggs
- kosher salt
- freshly ground black pepper
- 50 gram soft goat cheese
- capers
- 2 slices of toast
Directions
- In a pan, heat the butter over a medium heat.
- When the butter is melted, crack in the eggs. Quickly whisk the eggs until they’re well beaten. Season with salt and pepper.
- Leave the eggs on the heat, stirring occasionally.
- Cut up the goat cheese into large chunks.
- Once the eggs are almost cooked to your preference, add the cheese. Stir constantly until the cheese has completely melted.
- Serve on buttered toast, sprinkled with capers.
